Fondue Fun

My sister Jamie came over a few days ago and we had a fondue party. It's been a while since I've made fondue and I forgot how much fun and how yummy it is! Here's the recipe I use. It is given with instructions for a fondue pot. If you don't have one you can still try it in a regular pot.

Cheese Fondue

2 Cups apple juice
3 cloves garlic pressed
4 shakes of mustard powder
4-4 1/2 cups cheese (I used colby jack, you can mix it up & use whatever you like/have)
5 TBL cornstarch
3 shakes worcestershire sauce

Combine shredded cheese & cornstarch. Bring juice to boil over setting 5 & add garlic. Add 3 shakes of mustard powder & lower temperature to setting 3 1/2. Add cheese/cornstarch mixture & stir. Add worcestershire sauce and mix until all cheese is melted & smooth. Serve on setting 2 1/2 - 3!

We like to dip broccoli, cauliflower, carrots, bread (last time we used an italian seasoned one that was DELICIOUS) and green apples.

Chocolate Fondue

2 cups chocolate chips
1/3 cup half & half

Place chocolate chips in fondue pot & add half & half. Heat over setting 4 & stir constantly until melted & smooth. When melted turn down to setting 2 & serve!

We served the chocolate fondue with strawberries, bananas, pretzel sticks, marshmallows, cinnamon bears, cheesecake & fresh pineapple (that's been patted dry).

Do you have any more suggestions of good things to dip?

The BEST Bread! Seriously!

A good friend of mine, Sara, gave me this wonderful bread recipe. It is 100% whole wheat and is so soft & yummy! Even Johnathan, who is picky about eating whole wheat foods (he usually doesn't want more than half of it to be wheat) LOVES this recipe! I made it yesterday and took pictures so I could share it with you.

Honey Whole Wheat Bread (Makes 3 loaves)

3 1/2 cups warm water
4 1/2 tsp active dry yeast (or 4 tsp. instant yeast)

Let yeast dissolve in water for 5 minutes. If you are using instant yeast, skip this step & add the yeast to the top of the flour. (Instant yeast doesn't need to dissolve in water)

Then add...

1/3 cup honey
1 1/2 tsp. soy lecithin
9 TBL vital wheat gluten
3/8 tsp. citric acid
3 1/2 cups flour

Here's everything in my mixer ready to be mixed

Mix together.
As you can see, it's really wet

Now cover & let raise for 30 minutes.

Here's a picture of the less common
ingredients. On the left is the Lecithin,
top right is the wheat gluten, bottom
is the citric acid. I bought all these at
Good Earth. They are dough enhancers
& are healthy. :)

After raising for 30 minutes

After raising for 30 minutes, Add:

2 TBL melted butter or margarine
2 tsp brown sugar
1/3 cup honey
1 TBL salt
3 1/2 cups flour (add slowly until it's the right texture)

You may need to add more or less flour until your dough is pulling away from the sides of your bowl and when you touch it, your fingers are mostly clean with a little dough stuck on them.

Mix & let raise for 30 more minutes

Now knead for 5-10 minutes. You can use your bread hook, do it by hand, or even add it to your bread machine to knead it.

After raising 2nd time
Now shape into 3 loaves, cover & let raise in warm spot until about 1 inch over tops of pans. A trick I've learned is that you can speed up raising time by warming up your oven for a couple minutes (sorry I don't know a temp.) and letting the dough raise in there. Just don't get it too hot! It should be comfortably warm when you stick your hand in.

After raising 3rd time

Now Bake at 350* for 25 minutes. (I have to bake mine at 340* for 30 minutes because my oven is hotter. Kind of a trial & error sort of thing)

Finished Product! Mmmm!

So YUMMY! I love the smell of fresh baked bread!

Sara gave me some tips to making good bread:
1. Good flour- (Far better when you grind your own wheat)
2. Not too much flour
3. Kneading
4. Make sure your water isn't too hot when you dissolve the yeast
5. Don't over-cook. It will make a dry crumbly loaf.

Good Luck & ENJOY!

My Shopping Trip

I did a big coupon shopping trip this morning. I love being able to save so much money, get a nice stock of things we use all the time, and to be able to buy fun things I would not normally spend money on because they are really cheap! I went to Smiths & Maceys this morning. This is what I bought:
Pillsbury Biscuits $.79 each

Crush Cups Yogurt $.88 each

Angel Soft Toilet Paper $4.79 (Reg. $7.78)
& Sparkle Paper Towels $5.89 (Reg. $7.89)

Suave kids shampoo, detangler spray,
and hair spray $1.37 each (Not the BEST deal,
but I haven't seen it on sale for a while &
we were all out of all our stock)

Dove deodorant $.94

Arrowhead water $2.33 each (Reg. $4.99)

Hefty zip storage bags $.69 each!

Cereal $.67 a box! -Don't judge my sugar cereal :D

I got a lot more of each item, but I forgot to take a picture before putting everything away, so that's why there's a bunch of pictures. My total before coupons & my fresh values card (which takes it to the sale price & takes off additional deals) was over $300. I paid $114!!! Total value of all the actual coupons I handed over was $28. Who says those $.50 coupons don't add up!

Camping Trip

We just got back from a 4 night camping trip! It was a lot of fun. Johnathan had a 4 day weekend with the 4th, so we packed up and headed out after work on thursday. We had never been up to Payson Lakes, so we decided to try it out. It was so pretty up there! The campgrounds were too close together for my liking. I like to get away from the city and enjoy the sounds of nature and not the sounds of other people. It didn't help that one of our neighbors decided to put up their tent in our campground... Like 10 feet from our tent... We would go to sleep to the sounds of their kids being noisy, and wake up in the night to the sounds of their dad snoring. That was the one bad thing about our trip. Well, maybe the bugs too. There were tons that seemed to be immune from bug spray.

Overall it was a lot of fun. We relaxed, read books, went fishing (okay, everyone else went fishing and I read my book while they fished), swam in the lake, and just had fun together! We splurged and bought a 3 burner Camp Chef stove and another dutch oven. I think I might have to plan more dutch oven meals just so Johnathan will cook! We LOVE dutch oven food and are super excited about our new toy!

Here are some pics from our trip!

I should have taken a picture of our van all loaded down. We seriously had that thing packed to the roof! It is so much work to go camping, but we can hardly wait till our next camping trip!
